I grew up in a household that always had some kind of tasty treat being baked in the kitchen. My passion for baking comes from my mom, as well as my grandmother. Well, this Seanchan Kaf Cake is one that instantly popped in my head to submit. This recipe was my grandma's, passed down to my mom, who passed it down to me. Three generations of baking are ready to be spun out in the 3rd age of The Wheel of Time! The Seanchan are very fond of their dark bitter drink, called Kaf, which pairs wonderfully with this cake. I envision this as a dish that was created with the arrival of the Ever Victorious Army introducing Kaf to these parts. Enjoy it with your cup of Kaf in the morning, or an after-dinner dessert!

2 cups cake flour
1 teaspoon baking powder
1 teaspoon baking soda
1 stick butter, room temperature
1 cup sugar
1 teaspoon vanilla
8 ounces sour cream
2 eggs
topping:
1 teaspoon cinnamon
½ cup brown sugar
½ - ¾ cups of chocolate chips
Preheat oven to 350 degrees F.
Sift the flour, baking powder, and baking soda together. Set aside.
Cream the sugar and butter in an electric mixer for 5 minutes.
Add eggs, one at a time, and vanilla.
Add the flour mixture alternately with the sour cream to the sugar, butter, eggs mixture at the lowest speed.
Grease a 9 or 10-inch tube pan.
Put ½ of the batter in the pan – smooth it out.
Top evenly with ½ teaspoon of cinnamon, ¼ cup brown sugar, and ½ of the chocolate chips.
Add the remaining batter and carefully smooth it out.
Top with the remaining cinnamon, brown sugar, and chocolate chips.
Bake at 350 degrees for 34 minutes for a 10” pan, 50 minutes for a 9” pan. Cool on a rack for 15 minutes.
