3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon ground cinnamon
½ tablespoon ground nutmeg
3 large eggs
2 ½ cups white sugar
1 cup vegetable oil
2 teaspoon vanilla extract
1 teaspoon almond extract
2 cups grated zucchini
1 cup walnuts
Preheat oven to 350 degrees F
Line muffin pan or use cooking spray
Sift flour, salt, baking soda, baking powder, cinnamon, and nutmeg together in a bowl
Beat eggs, sugar, oil, vanilla extract, and almond extract together in large bowl - do not over mix.
Add wet ingredients to dry ingredients and blend well - careful to not over mix.
Stir in zucchini and walnuts until combined.
Spoon batter into muffin cups, 3/4 full
Bake 30 - 40 minutes or until toothpick comes out clean
